Brussel Sprout Caesar

This idea turned out great!  Now I wish I had a great Caesar Dressing for you, but for now just use your favorite Caesar dressing.

Thinly slice brussel sprouts.  I used about a 1/3 of a 16 oz bag. The pictures shown are the full amount.  This served 2 of us as a side salad so slice as many as you feel you need.

Cook some good bacon in a pan, remove and let the bacon cool.  Empty the grease.  We used 2 slices.

In the same pan, sauté your brussel sprouts with a little salt and black pepper.  The residual bacon grease should be enough to sauté the sprouts but if you need too add a little olive oil.  You want to sauté the sprouts until slightly browned then remove.

To the same pan add some sliced mushrooms.  I used 4 good size white button but baby bellas would be great (I just didn’t have any on hand) or any other type you like.  Add about 1 Tablespoon of butter to pan and again season with salt and pepper.

Mix your brussel sprouts, mushrooms, and crumbled bacon in a bowl with some shredded parmesan and about 1 – 1 1/2 Tablespoons of Caesar dressing.  Place in serving bowl and sprinkle with more shredded parmesan.

The only thing that I feel could make this better is to add a perfect poached egg to the top.  If I did that I would use less dressing.
